Abstract
Tigernut (Cyperus esculentum) is a perennial grass-like plant with spheroid tubers, and pale yellow cream kernel surrounded by a fibrous sheath. It is also known as yellow nut sedge, earth or ground almonds,“souchet” in French,“ermandeln” in German and“chufa” in Spanish. Tigernut has been for many years one of the underutilized food crops in Nigeria. It is mostly eaten raw as a snack and is un-identified as a very important food crop that has great potential in managing, preventing and eliminating malnutrition (macronutrient and micronutrient deficiencies) or food insecurity problems. The aim of the study is to comparatively analyze the vitamin content of sun-dried and fresh tigernut. This study was limited to a comparative analysis of the vitamin contents of fresh and sun-dried tiger nuts. The tiger nuts were sourced from local vendors available in Oko, Orumba North Local Government Area, Anambra State. Vitamin C or Ascorbic Acid (AA) will be determined by 2, 4 dinitrophenyl hydrazine method of Roe and Kuethe described by Ball (2014) using colourimetric method. Vitamin E will be determined by spectrophotometric methods. The vitamin C values ranged from 30.90– 31.52 mg and vitamin E 4.71– 5.26 mg per 100 g of sample....
